Tanggung Jawab
- Oversee all culinary operations for passenger vessels, ensuring food quality meets international standards
- Develop innovative menus accommodating diverse dietary needs and cultural preferences
- Manage kitchen inventory, supply chains, and cost control while maintaining hygiene protocols
- Lead and train multi-cultural kitchen teams, fostering professional development
- Coordinate with F&B management to align culinary offerings with passenger expectations
- Implement safety compliance following maritime and health regulations
- Conduct regular kitchen inspections and performance evaluations
- Collaborate with procurement for ingredient sourcing across global ports
Kualifikasi
- Minimum 5 years progressive experience as Head Chef or Senior Sous Chef
- Culinary degree/diploma from accredited institution or equivalent certification
- Proven expertise in high-volume, multi-outlet kitchen environments
- Strong leadership skills with team management experience
- Knowledge of HACCP, sanitation, and maritime food safety protocols
- Ability to work efficiently in fast-paced, multicultural settings
- Experience with menu engineering and cost control systems
- Willingness to travel internationally for extended periods
